I seem to have people coming to the website, trying to see if a booking is available and then abandon the booking without entering any details. Once this happens, it shuts out that time slot for other people. How do I make sure that the booking is only confirmed when they actually pay for the reserved trip?

In Theme options -> WooCommerce integration you can make sure the the Initialized status is not considered as booked. That will do the trick.
